VEGAN CARROT CAKE MUFFINS

Happy Easter, all! ‘Tis the season for making yummy carrot cake! Unless you’re my husband, then you want
yummy carrot cake muffins instead haha.

I was searching Pinterest for a good vegan carrot muffin recipe, but they all had so much sugar in them so none of them caught my eye. Feeling defeated (dramatic, I know), I then remembered my fave food blog Oh She Glows. She has a carrot cake recipe, but I didn’t see a muffin recipe. Soo.. I just used the cake recipe to make muffins, and they turned out great!

Ingredients:

  • 1 1/2 cups (185 g) finely grated peeled carrot

  • 1 tablespoon (7 g) ground flax seed

  • 1/2 cup plus 1 tablespoon (140 mL) pure maple syrup

  • 3/4 cup (185 mL) almond milk or other plant milk

  • 1/3 cup (80 mL) grapeseed oil or melted coconut oil

  • 1 1/2 teaspoons pure vanilla extract

  • 1 teaspoon apple cider vinegar

  • 2 teaspoons ground cinnamon

  • 1 teaspoon ground ginger

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon fine sea salt

  • 1 1/2 cups (230 g) whole-grain spelt flour

  • 1 cup (100 g) walnuts, chopped

Directions:

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with muffin liners. 

  2. In a large bowl, mix the grated carrot, ground flax, maple syrup, almond milk, oil, vanilla, and vinegar until thoroughly combined. 

  3. In that same bowl, one-by-one, stir in the dry ingredients: cinnamon, ginger, baking powder, baking soda, salt, flour, and half of the chopped walnuts. Mix until just combined.

  4. Pour the batter into the prepared tin and smooth evenly with a spoon. Sprinkle the remaining walnuts on top of the muffins and press them gently into the surface. 

  5. Bake for 20-25 until the muffins spring back slowly when touched and a toothpick inserted into the middle comes out clean.


Note: I substituted the coconut oil with vegetable oil, and spelt flour for all-purpose flour. They still turned out delicious in my opinion!

Another Note lol: As this is a recipe for a loaf, the bake time is 40-50 minutes, but I changed the bake time to 20-25 minutes for muffins. I baked mine for 23 minutes.
